Spicy Chicken Pasta Recipe (serves 2):

- 2 chicken breasts
- 454 grams of penne
- 1 cup frozen peas
- 1 cup frozen chopped kale
- 150 grams of green beans
- 1 clove chopped garlic
- red chilli flakes to taste
- olive oil to taste

1. Bring a salted pot of water to boil in a large pot. When water has boiled add penne and cook for 10 minutes or until al dente. In the last two minutes of cooking reserve up to 1 cup of pasta water and set it aside.
2. Dice up the chicken breasts into bite sized pieces
3. In a large high-sided pan add a large drizzle of olive oil. Turn to medium-high heat. Add the chopped garlic and chilli flakes. Let it cook for one minute.
4. Add the diced chicken breasts to the pan and season with salt and pepper. Cook for 6 minutes or until chicken is cooked through.
5. Add the kale, peas, and green beans to the pan. Cook for 2-3 minutes until softened.
6. Add the drained, cooked penne to the pan. Add an additional drizzle of olive oil and chilli flakes if desired. Slowly add pasta water to pan to ensure the sauce reaches your desired consistency.
7. Serve with fresh shredded parmesan on top of a plate or bowl.
