Today I'm sharing our actual meals of the week. I didn't go into this week with a solid plan, just some foggy ideas in my mind and here's how it all worked out. Homecooked, freezer meals, crockpot, snacky...we had a little bit of everything this week.
Favorite recipes are in my 2 cookbooks (150 recipes in each) and I'm always coming up with new things we really like, like the broccoli and cauliflower soup. I can see eating that every Friday during Lent. See below for most of the recipes. https://www.acountry-life.com/shop
Please consider joining my email newsletter. It comes out once a week usually on Mondays. In there I share extra tidbits of family life, recipes, meal plans, new merch coming to the shop and so much more. https://mailchi.mp/b5285cf875a2/country-life-connections

Broccoli Cauliflower Soup
1 1\2 pounds broccoli cauliflower mix
3\4 c. chopped onion
scant cup of flour
1 1\3 c. milk (2%)
8 cups chicken broth (I started with 7, but added more at the end)
7 Tbsp. butter
3\4 c. shredded Cheddar cheese
Simmer broccoli and cauliflower until crisp tender in chicken broth. Do not drain. Melt butter and sauté onion until soft. Add flour and cook until thick. Slowly add in vegetable and water mixture, stirring to combine often. Stir and cook until smooth. Stir in milk and cheese until melted. Salt and pepper to taste. This is so, so good.

Hi friends! I'm Jennifer, a forty-something wife and mother of 7 children ages 9 - 25. We are Catholic. We homeschool. We cook from scratch. We farm cranberries. We drink coffee. We advocate for Down syndrome awareness. We are loud. We are chaotic.
Here I'll share vlogs about all these things, what I'm doing that works and what I've tried but didn't work. I hope to encourage you in your journey through motherhood, homeschooling, learning to cook, and growing in your faith through it all.
